Matcha Dry Rub Recipe

Matcha is typically included in sweets when baking and cooking, even finding its way into Kit-Kat bars in Japan, but that mellow tea flavor can work with savory too. When looking for a unique dry rub for your turkey, chicken, pork, or steak, why not try something special. Matcha works well, as long as you use the more potent culinary varieties. Summer Harvest adds a nice subtle flavor. Smoothie Booster is more powerful. Roasted brings a hint of smoky umami you'll love.

Ingredients:

  • 1 tablespoon sea salt
  • 1 tablespoon brown sugar
  • 1 teaspoons matcha (Summer Harvest, Smoothie Booster, Roasted)
  • 1 and 1/2 teaspoons paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions:

Stir all the ingredients together in a bowl until mixed well. Rub mixture over your turkey, chicken, pork, steak, or other meat/meat substitute. Cook selected meat accordingly. Spice rub can be stored in a spice jar or ziplock bag for several months.

You can also add 1 teaspoon of matcha to any brine recipe to make it into a unique tea brine. Roasted is highly recommended.
