Preheat oven to 300.

In a medium bowl, whisk together the egg white and vanilla until frothy. Set aside.

In another medium bowl, mix together both sugars, cinnamon, matcha, and salt. Set aside.

Toss the pecans in the egg white mixture.

Add the coated pecans to the sugar mixture and toss until coated.

Place pecans on a baking sheet lined with parchment paper and bake at 300 for 40 minutes.

Mix the pecans halfway through baking time.

Let cool thoroughly before eating.
